Red wine food pairing: what works and why

Two numbers decide most red wine food pairing: the tannin in the glass and the fat on the plate. The tannin ladder tells you what the wine needs from the food. Astringency is tannin binding your salivary proteins and stripping the slip out of your mouth, and fat interrupts it: dietary oils decrease the perception of astringency of grape tannin solutions, according to Saad and colleagues in the Journal of Agricultural and Food Chemistry in 2021. So a firm red lands softer on a fatty dish, harsher on a lean one. A tannin assay of 1,325 commercial red wines put Cabernet Sauvignon at an average of 672 mg/L and Pinot Noir at 348, according to Harbertson and colleagues in the American Journal of Enology and Viticulture. The body ladder tells you whether wine and dish are the same size, and appellation law supplies its rungs: Beaujolais reds must reach 10.0% natural alcohol, while Chianti Classico must reach 12.0%, Barolo 13.0% and Amarone 14.0%, according to Italian Wine Central. Read the plate for fat, salt, sugar and heat, then pick the rung.
Why does food change the way a red wine tastes?
Because most of what you eat acts on the two sensations red wine leads with: astringency and bitterness.
Astringency is not a flavour. It is a physical event. Lee, Ismail and Vickers, in the Journal of Food Science in 2012, assayed pooled saliva against tannin, alum and hydrochloric acid solutions. Tannins and alum precipitated many of the salivary proline-rich proteins; acid did not. Their conclusion is careful, and worth keeping: precipitation of salivary proteins may be involved in the mechanism of astringency, but precipitation of the proline-rich proteins is not requisite for astringency to develop, according to Lee, Ismail and Vickers. Fat gets in the way of it. Saad and colleagues combined nuclear magnetic resonance with optical and electron microscopy and watched catechin, a majority component of grape tannins, interact with lipid droplets in a phospholipid-stabilised oil-in-water emulsion. The droplets grew larger and their interfacial layer became more mobile. Their sensory analysis then confirmed the consequence: dietary oils decrease the perception of astringency of grape tannin solutions, according to Saad and colleagues.
Salt works on the other sensation. Sodium-containing ingredients reduce the bitterness of compounds including quinine hydrochloride, caffeine and potassium chloride, according to Breslin and Beauchamp, cited in the Institute of Medicine's review of sodium in foods. Adding sodium acetate to a sugar and urea mixture raised perceived sweetness, and adding it to sugar alone did not, which is how they showed the improvement came from bitterness being suppressed. Seasoning the dish properly does part of the wine's work.
That is the mechanism. Here is the field evidence. Koone, Harrington, Gozzi and McCarthy ran 248 participants through four wines against four foods for the Journal of Wine Research in 2014. Perceived tannin raised the match score with spicy Italian salami, which the authors call a fatty meat, at β =.13, and lowered it with chèvre at β = −.21, both at p <.001, according to Koone and colleagues.
Hold the size of that effect in mind. In the same study, the models built from sweetness, acidity and tannin explained between 1% and 5% of the variation in match ratings. The ladders below are a starting position, not a law.
Which red wines are actually tannic?
Cabernet Sauvignon roughly doubles Pinot Noir at the mean, and the spread inside each variety is wider than the gap between them.
Harbertson and colleagues put 1,325 commercial red wines through a protein precipitation assay: Cabernet Sauvignon, Merlot, Pinot Noir, Syrah, Zinfandel and several blends, sampled from California, Oregon, Washington, Australia and France. Tannin ran from 30 to 1,895 mg/L catechin equivalents, mean 544, standard deviation 293, according to Harbertson and colleagues.

Two things stop that table being a rulebook. Within a single variety the variation was larger than an order of magnitude, and in Cabernet Sauvignon and Pinot Noir it reached 32-fold, according to UC Davis Viticulture and Enology research summary 138, so the populations overlap and a soft Cabernet can sit below a firm Pinot Noir. And that spread inside the bottle is wider than the tannin variation reported in the fruit, which puts winemaking technique forward as the largest lever on where a wine lands, or at least as adding to the variation already in the vineyard.
Nebbiolo, Sangiovese and Tempranillo are not in that set. Barolo, Chianti Classico and Rioja therefore sit on the ladder by reputation.
What makes a red taste heavy?
Ripeness, extraction and alcohol together, and appellation law puts a floor under all three.
You cannot read body off a label, but you can read the minimum a wine had to clear. That gives four rungs you can trust, because they are legal requirements rather than tasting impressions.

The Italian figures come from the disciplinari, as described by Italian Wine Central. The Beaujolais figure is the minimum natural alcohol its cahier des charges sets for red wines, which is a floor on the grapes rather than on the finished bottle, so the two columns are close cousins rather than twins.
Use the ladder in one direction only. Body is a veto, not a recommendation. A 14% Amarone will bury a poached dish whatever the tannin does, and a Beaujolais will vanish under a braise. Matching weight stops a pairing failing; it does not by itself make one work.
How do you match a red to a dish, in order?
Read the plate first, in four passes, and let the wine list come last.
Fat. The strongest lever, and the one with the clearest mechanism behind it. More fat means more tannin the dish can absorb. This is why cut matters more than animal, and the full version of that argument lives in best wine with steak.
Salt. Seasoning suppresses bitterness, so a properly salted dish makes an oaky or firm red read as fruitier. An under-salted one leaves the wine exposed.
Sugar. Sweetness in the food sets the bar the wine has to clear. Below it, a dry red reads as sour and hollow.
Heat. Chilli and alcohol compound, which is a physiological fact rather than a preference, and it caps the alcohol you can bring.
Then pick the rung: body to match the weight of the dish, tannin to match the fat. When the two disagree, follow the fat.
Why does red wine taste metallic with fish?
Iron, not colour. That is the finding that finally explained the oldest rule in pairing.
Takayuki Tamura and colleagues at Mercian's Product Development Research Laboratory tested 38 red wines and 26 white wines against scallops, and published the result in the American Chemical Society's Journal of Agricultural and Food Chemistry in October 2009. Wines higher in iron produced a more intense fishy aftertaste, and binding up the iron made the aftertaste diminish, according to Tamura and colleagues. Their own conclusion points somewhere more useful than the rule it explains: low-iron red wines might be a good match with seafood.
So the working version is not "no red with fish". It is that the risk sits in the wine's iron rather than its shade, which means a light red is not automatically safe, and the failure shows up as a metallic aftertaste rather than as a clash you notice on the first sip. Oily fish is where it bites hardest.
Does red wine work with cheese?
Better than red wine deserves, and that is the problem.
Madrigal-Galán and Heymann ran eleven trained judges over eight wines, Cabernet Sauvignon, Merlot, Pinot Noir and Syrah, before and after eight cheeses, from Mozzarella and Teleme through two Cheddars, Emmental and Gruyère to Gorgonzola and Stilton, for the American Journal of Enology and Viticulture in 2006. Astringency fell after cheese, according to Madrigal-Galán and Heymann. So did oak flavour and bell pepper. Butter aroma was the only attribute the cheese significantly enhanced. They also found no significant wine-cheese interaction, meaning the effect of any given cheese was much the same across all eight wines.
Read that as a trade rather than a triumph. Cheese sands the edges off a red, and it does so fairly indiscriminately, which flatters a rough wine and blunts a precise one. The bottle you want to taste in full is not the bottle to open with the cheese course.
Goat cheese is the outright clash. Cabernet Sauvignon scored 4.21 against chèvre while Sauvignon Blanc scored 5.69, a gap significant at p <.001, according to Koone and colleagues, and perceived tannin was the variable pulling the red down. Acid beats tannin on fresh goat cheese, every time.
What breaks a red wine outright?
Sugar and chilli, in different ways, and both are avoidable.
Sugar. Sweetness works on tannin directly. Adding sweeteners to tannic acid solutions reduced both perceived dryness and bitterness, according to Lyman and Green in Chemical Senses in 1990. A sweet glaze on pork therefore softens a firm red, which is useful. A dessert does the opposite, because the food is now sweeter than the wine and the wine has nothing to answer with. Koone's panel found sweetness the only significant driver of match with milk chocolate, at β =.14, p <.001, with tannin and acidity dropping out; Port scored 5.46 against Cabernet Sauvignon's 4.27. Chocolate wants a sweet red, not a tannic one.
Chilli. Ethanol potentiates the response of the vanilloid receptor VR1 to capsaicin, protons and heat, and it lowers the threshold for heat activation of VR1 from about 42°C to about 34°C, according to Trevisani and colleagues in Nature Neuroscience in 2002. Your mouth sits above 34°C, which is the mechanism they offer for alcohol producing a burn at body temperature. So a 15% red with a chilli-heavy dish is not a clash of flavours, it is the same receptor being pushed twice. Drop the alcohol before you drop the tannin.
One more from Lyman and Green, because it changes how you think about a long meal: across repeated exposure to tannic acid, mouth dryness increased significantly over time while bitterness increased only slightly. Tannin accumulates. A wine that read as balanced on the first glass is drier by the fourth, which is an argument for food that keeps replenishing fat rather than for a lighter bottle.
Does serving temperature change the pairing?
It changes the wine enough to move a marginal pairing either way, and it costs nothing.
Christopher Simons describes the two effects, writing in Temperature in 2019. Taste sensitivity is greatest with stimulus temperatures between roughly 20 and 34°C, so sweetness, sourness and bitterness are often perceived as less intense when a wine is chilled. And as wine is chilled, the kinetic energy of aroma molecules drops, leaving fewer volatile compounds in the headspace and a quieter wine. Chilling does reduce perceived astringency in reds, though he notes the effects are fairly small. The serving range Simons recommends for reds is 15 to 18°C.
The practical read: a warm room is what ruins most big reds at dinner, not the food. Twenty minutes in the fridge before a rich dish costs you aroma and buys back freshness. Judge which trade the plate needs.
Get the ladder at the counter, not from memory
Knowing that fat sets the tannin ceiling is worth nothing if the ladder is not in front of you when you are choosing a bottle.
