Best wine with steak, cut by cut

Fat decides. Ask what the best wine with steak is and the useful answer is another question: which cut, cooked how? A ribeye and a fillet are not the same food, and the wine that flatters one makes the other taste thin.

USDA FoodData Central reports that a choice-grade boneless ribeye carries 18.43 g of fat per 100 g raw. The same reference set puts a strip loin at 9.16 g and a fillet at 7.10 g, all three graded choice and trimmed to 0 inch fat. So a ribeye carries 2.6 times the fat of a fillet. Fat is what makes tannin behave: according to Saad and colleagues, writing in the Journal of Agricultural and Food Chemistry, dietary oils lower the perceived astringency of grape tannins. The rule follows. The more marbled the cut, the more tannin you can put against it. Ribeye and other heavily marbled cuts take the firmest wine on the table, which in practice means Left Bank Bordeaux, Napa Cabernet or young Barolo. Fillet is lean and mild and gets flattened by those, so it wants mature Bordeaux, Pinot Noir or Côte-Rôtie. Cooking method then adjusts the answer: a hard char, a blue-rare centre and a pepper crust each pull in a different direction.

Why does a tannic red taste softer with a fatty steak?

Because the fat reaches the tannin before your saliva does.

Astringency is not a taste. It is what happens when tannins bind the proteins in your saliva, particularly the proline-rich ones, and precipitate them out, stripping the slip from your mouth. Lee, Ismail and Vickers, writing in the Journal of Food Science in 2012, found that tannins precipitated many of those proline-rich proteins while hydrochloric acid did not. Their conclusion is careful: salivary protein precipitation may be involved in the mechanism of astringency, but precipitating the proline-rich proteins is not a requirement for it.

Fat interrupts the reaction. Saad and colleagues published "New Insights into Wine Taste: Impact of Dietary Lipids on Sensory Perceptions of Grape Tannins" in the Journal of Agricultural and Food Chemistry in 2021. Their microscopy showed catechin, the majority component of grape tannin, inserting itself into the emulsifier layer around lipid droplets, which then grew larger. Their sensory panel showed the consequence: dietary oils decrease the perceived astringency of grape tannin solutions. A spoonful of rapeseed, grapeseed or olive oil taken before a tannin solution reduced its astringency, according to the American Chemical Society's account of the work. Olive oil had the largest effect, with the tannins perceived as fruity instead. It shows up in a tasting room too. Madrigal-Galán and Heymann ran eleven trained judges over eight red wines before and after cheese for the American Journal of Enology and Viticulture in 2006. Astringency fell. So did oak and bell pepper. Butter aroma was the only attribute that went up.

Rendered ribeye fat does the job the cheese did. Every rule below is an argument about how much of it you have.

How much fat is actually in your steak?

Between 7.1 and 18.4 g per 100 g, decided almost entirely by the cut. These are USDA FoodData Central's SR Legacy figures with grade and trim held constant: choice, trimmed to 0 inch fat, raw, separable lean and fat.

Two naming notes, because menus swap them constantly. What America calls a strip or New York strip is what Britain calls sirloin. What America calls tenderloin is what Britain calls fillet.

Grade moves the number further than most people expect. A select-grade ribeye carries 14.1 g against choice at 18.43 g, according to USDA FoodData Central. That 4.33 g gap is bigger than the whole distance between strip loin and fillet, so buying up a grade adds close to a third more fat to the same cut. Prime is the grade above choice and is awarded on more marbling still, which means you can also move up in tannin.

What should you drink with a ribeye?

The most tannic wine you own, and there is a measurement behind that.

Harbertson and colleagues put 1,325 commercial red wines through a protein precipitation assay for the American Journal of Enology and Viticulture in 2008. According to that paper, mean tannin came out at 672 mg/L catechin equivalents for Cabernet Sauvignon, 652 for Zinfandel, 559 for Merlot, 455 for Syrah and 348 for Pinot Noir, inside an overall range of 30 to 1,895 mg/L. Read those as means and nothing more: the same paper reports a 32-fold spread inside Cabernet Sauvignon alone, so the varietal populations overlap. At the mean, Cabernet Sauvignon carries close to double the tannin of Pinot Noir. Put that against 18 g of fat per 100 g and it lands soft. Put it against a fillet and it lands like sandpaper.

Which is why both classic ribeye answers are Cabernet, arrived at from opposite directions. Cabernet Sauvignon accounts for 52% of Médoc plantings and up to 80% in the best crus, according to Dico du Vin. That is why the Left Bank estates on our Bordeaux map read as structure first and fruit second. The Napa Valley Vintners report Cabernet Sauvignon at 54% of the valley's plantings, 25,000 acres. Napa gives you the same variety riper, rounder and warmer, as in Opus One.

Choose between them on seasoning rather than preference. Left Bank for a plainly salted ribeye, where the wine has to supply the savoury half of the plate. Napa where a butter baste or a sauce has already supplied it.

Why does fillet make good Cabernet taste worse?

Because there is nothing in a fillet to blunt the tannin.

Run the Saad mechanism backwards. Fewer lipid droplets in the mouth means fewer of the interactions that lowered astringency for their panel, so the wine tastes drier and less fruity than it did on its own, and the steak tastes of less than it did before you drank. Fillet is not lean because there is less to it: according to USDA, its protein runs to 21.57 g per 100 g against the ribeye's 18.69 g. What it has less of is fat, and fat is the variable the research moves.

Three fixes.

Use tannin that has already been restructured. Weilack and colleagues, again in the American Journal of Enology and Viticulture, in 2021, put red wine through forced ageing and tracked its phenolic polymers. Anthocyanins get incorporated into the tannin molecules, that incorporation changes how the molecules interact with wine polysaccharides and proteins, and the authors put those interactions at the centre of how red wine astringency is perceived. A mature Left Bank Bordeaux is a Cabernet that has already been through it. That is the fillet wine.

Pair the sauce, not the meat. Fillet arrives under béarnaise, peppercorn or a red wine reduction more often than it arrives naked, and the sauce carries more fat than the meat does. Béarnaise is butter and egg yolk, which is lipid, which buys back tannin tolerance you did not have a moment ago.

Or drop a variety. Pinot Noir at a 348 mg/L mean is half a Cabernet.

What changes with a dry-aged steak?

Dry-aged beef is more savoury than fresh beef and its crust grows mould, so the wine needs savoury character of its own.

Ribeiro and colleagues reviewed the field for the Journal of Food Science in 2025. Most producers settle on 14 to 40 days, according to Ribeiro and colleagues, and 21 days is the widely accepted compromise between tenderness, flavour intensity and yield. Glutamate rises 30% to 45% over those 21 days. The crust grows a microbial community doing specific jobs: Thamnidium secreting collagenolytic enzymes that weaken the perimysial connective tissue, Mucor contributing the protease activity that liberates peptides and free amino acids, Mucor and Penicillium lipases generating free fatty acids that oxidise into aldehydes and ketones, 2,3-octanedione supplying a buttery note, and the yeast Debaryomyces hansenii deamidating glutamine and arginine.

Read that as a tasting note. The same review describes the result as a roasted and nutty profile with concentrated umami, and puts the point where sensory gains plateau at around 35 days. A young, fruit-forward Cabernet argues with all of it.

Barolo does not. According to Italian Wine Central's summary of the disciplinare, Barolo is 100% Nebbiolo, cannot be released before 38 months of ageing with at least 18 of those in wood, extends to 62 months for a Riserva, and carries a 13% minimum alcohol. A wine that spent three years in a cellar before it was allowed out meets a three-week-aged steak on level terms: both are built on savoury development rather than primary fruit. Start with Barolo on the Piemonte map or with Giacomo Conterno.

Steak au poivre and the pepper molecule

This is the one steak pairing where the plate and the glass share a compound.

Wood and colleagues identified rotundone, a sesquiterpene, as the aroma compound behind black pepper and behind peppery Shiraz, in the Journal of Agricultural and Food Chemistry in 2008. The aroma detection thresholds they report are tiny: 16 ng/L in red wine and 8 ng/L in water. And roughly 20% of their panellists could not detect it in water at 4,000 ng/L, the highest concentration they tested.

Two things follow. A cracked-pepper crust against a Northern Rhône Syrah is a literal aroma bridge, not a metaphor. And if one person at the table gets nothing from it, that is the specific anosmia Wood's panel measured, not inattention.

Where to find the peppery version: Cornas, where the INAO cahier des charges permits one variety and says so in a single line, "Les vins sont issus du cépage syrah N". The same document describes the wines as powerful and structured, with abundant but silky tannins. Auguste Clape is the reference. Côte-Rôtie is the perfumed one: its own cahier des charges allows Viognier as a cépage accessoire interplanted among the Syrah vines, up to 20% of the stocks in a parcel, vinified by blending the grapes rather than the finished wines, and the specification itself notes the rounder mouthfeel that follows.

Peppercorn sauce moves the target again, because cream and butter add lipid to the pepper. Now a firmer Syrah or a Cabernet both work.

Blue-rare or burnt: the two cases that break the rule

One removes the wine's helper. The other adds a competitor.

Blue and rare. Almost no Maillard crust, less rendered fat reaching your palate, a cooler and wetter centre. Everything that made the big tannic wine work has been turned down, so turn the wine down with it: older Left Bank Bordeaux with its tannin already restructured, or Pinot Noir, or a lighter Côte-Rôtie. A young first growth is the wrong bottle for a blue fillet and it is the most expensive way to be wrong.

Heavily charred. Char is bitterness, and it stacks with the bitterness already in the wine. There is a specific overlap worth knowing about. The Australian Wine Research Institute calls guaiacol a component of smoke, describes it as "smoky", "phenolic" and "medicinal", gives it a sensory threshold of 23 µg/L in red wine, and reports 10 to 40 µg/L in wines matured in heavily toasted oak. It describes 4-methylguaiacol as "char" and "spicy", puts its red wine threshold at 65 µg/L, and notes that it forms almost exclusively during the toasting of oak barrels. So a charcoal-grilled steak and a heavily toasted-oak wine are the same aroma served twice. Commit to that on purpose, or step off it and pick a wine raised in older or larger wood.

Salt is the lever most people skip. Breslin and Beauchamp showed in Chemical Senses in 1995 that three sodium salts and a lithium salt suppressed bitterness across a range of bitter compounds, while potassium chloride did not. Salting a charred steak properly does as much for the wine as it does for the meat.

Where does Malbec actually earn its reputation?

On the grill, in two versions sold under one word.

Argentina is the volume answer. It had 46,890 hectares of Malbec at the end of 2025, 23.9% of the national vineyard and 42.6% of the red varieties destined for winemaking, according to Instituto Nacional de Vitivinicultura figures reported by Ámbito. High-altitude Mendoza Malbec, from Catena Zapata downwards, is dark, ripe and round-edged, and it suits a charred flank or bavette better than a Left Bank Bordeaux would: not much fat to work with, plenty of char, and a tannin that holds rather than grips.

Cahors is the other one and it is a different wine. Vin de Cahors specifies a minimum of 70% Côt, the local name for Malbec, with Merlot and Tannat the only permitted complements, across roughly 2,000 hectares in production. The appellation has held AOC status since 15 April 1971. Cahors is firmer, drier and more savoury. Send it where Mendoza does not go: dry-aged sirloin, a heavily salted crust, anything with a reduction rather than a butter.
