What influences a wine's body?

Several factors shape a wine's body. They include its alcohol content, phenolic compounds, and winemaking techniques. Alcohol is the primary factor in dictating a wine's weight and body. Typically, the higher the alcohol level, the more weight the wine has. An increase in alcohol content increases the perception of density and texture. Some yeasts can produce 18% alcohol in wine. Extra sugar can also be added to achieve a high alcohol content. That practice is known as chaptalization.

Tannins also contribute to the perception of body or weight in wine. These compounds add a gritty texture and chalky, astringent taste. Tannins normally derive from the skins, seeds, and stems of the grapes themselves. The maceration process extracts them. They can also come from contact with oak during barrel aging. For red wines, fermentation occurs with the grape skins. Those skins impart color, flavor, and tannins. For white wines, skins are typically removed before fermentation. But winemakers may choose to crush white grapes for a short period of skin contact, usually for three to 24 hours. That contact extracts flavor and tannin.

How do you assess wine body?

Visually that sweeter wines are denser. They leave thick, viscous streaks down the inside of the glass when swirled. Those streaks are the legs or tears. Heavy wines are also generally deeper in color and more intense on the nose.

It evaluates "Taste" quality and "Harmonious persistence," which contribute to the overall impression of a wine's body and structure.

Why does wine body matter for collectors?

Wines of "good structure with high levels of acid, tannin or sugar" can age for over twenty years. Tannins and alcohol influence a wine's body. For food pairing that the most basic element is understanding the balance between the "weight" of the food and the weight, or body, of the wine. Pairing heavy, robust wines like Cabernet Sauvignon with a light, delicate dish like a quiche can overwhelm the food. Conversely, light-bodied wines such as Pinot Grigio would be similarly overwhelmed by a hearty stew. This balance ensures a more enjoyable dining experience.

Storage conditions also play a role in how a wine's body is perceived. Lower temperatures emphasize acidity and tannins.
