Oak Ageing Wine: What Élevage Does in the Barrel

Oak ageing wine does two jobs at once. It hands the wine compounds out of the wood, and it holds the wine while the rest of maturation happens: malolactic conversion, settling, racking off the lees. Red wine is characteristically transferred to white oak barrels to mature for a period of weeks or months, and that "this practice imparts oak aromas and some oak tannins to the wine." How much aroma arrives depends on how hard the barrel was toasted. The Australian Wine Research Institute reports, in a table adapted from Ribéreau-Gayon et al. (2006), that guaiacol extracted from oak climbs from 1 µg/L in non-toasted wood to 27.7 µg/L at medium toast and 30.3 µg/L at heavy. Élevage is the raising period around all of that: everything between the end of fermentation and the day the wine is bottled. Oak is one decision inside it, not the whole of it.

What does oak ageing do to a wine?

Two measurable things: it adds aroma compounds, and it adds tannin. Tannins come from the skins, seeds and stems of the grapes, or from contact with oak during barrel ageing, and that they "add a gritty texture and chalky, astringent taste". That texture reads on the palate as weight. The same article uses oaked Chardonnay from a warm region as its example of a white that carries more body than a stainless steel fermented Chardonnay from somewhere cool like Chablis.

So oak is one of the levers a winemaker pulls on structure, alongside grape tannin from skins, seeds and stems. It is not a flavour sprayed on at the end.

How much does toast level change the aroma?

More than most buyers assume. The AWRI reports extraction rising steeply from non-toasted to medium, then flattening or reversing at heavy toast.

Read down the columns and the pattern is not a straight line. Syringol derivatives climb hardest: the AWRI describes them as increasing dramatically in toasted oak against non-toasted. But eugenol peaks at medium toast, 71.7 µg/L, and falls back to 44.3 at heavy. Methyl-4-guaiacol does the same, 38.7 at medium down to 24.7 at heavy. Cresols barely extract at all, even from heavily toasted wood. And the mix is not fixed by the toast alone: the AWRI says the composition of these phenols "reflects the structure of the lignin in the particular oak, as well as the heating temperature".

Two of those compounds carry most of the smoke you smell. The AWRI describes guaiacol as smoky, phenolic and medicinal, with a sensory threshold of 20 µg/L in white wine and 23 µg/L in red, and concentrations of 10-40 µg/L turn up in wines matured in heavily toasted oak: at or above the threshold. 4-methylguaiacol brings char and spice, is "formed almost exclusively during the process of toasting oak barrels" (Godden et al. 1999), and has a reported sensory threshold in red wine of 65 µg/L (Boidron et al. 1988).

Is new oak a sign of quality?

On its own, no. Three things in the record argue against reading oak as a quality signal.

Oak flavour can be bought without a barrel. The guidance is blunt about it: "Oak could be added as chips used with a non-wooden barrel instead of a fully wooden barrel. This process is mainly used in cheaper wine."

Oak also hides things. The AWRI measured the aroma threshold of 4-ethylphenol, the marker compound for Brettanomyces, at 425 µg/L in a full bodied red with intense green methoxypyrazine character, and found that "considerable oak influence increased the aroma threshold to 569 µg/L". A heavily oaked wine carries more Brett before your nose catches it.

And oak is not automatically clean wood. The AWRI shows that TCA can be formed in oak, so a wine can show a musty taint with no cork contact at all, which is worth knowing before you blame the closure for a corked or oxidised bottle. New barrels can also give up small amounts of acetic acid during storage, through hydrolysis of acetyl groups in the wood hemicellulose.

Does malolactic fermentation change what you taste?

Yes, and it usually runs alongside the barrel work. We describe malolactic conversion as a bacterial process that turns crisp, green apple malic acid into soft, creamy lactic acid, softening the taste of the wine. Lactic acid bacteria from the genera Oenococcus, Lactobacillus, Pediococcus and Leuconostoc do the work, either inoculated deliberately or arriving by chance.

The buttery note in some Chardonnay comes from diacetyl produced by those bacteria. The AWRI puts numbers on it: at 1 to 4 mg/L diacetyl adds buttery or butterscotch complexity, above 5 mg/L the wine can be regarded as defective, and yeast alone typically make less than 1 mg/L, which sits below the sensory threshold.

Which wines get it is a style decision. Most reds go through complete malolactic fermentation, both to cut acidity and to stop it happening in bottle. Lighter aromatic whites such as Riesling generally do not. Barrel-fermented Chardonnay commonly does. Winemakers watch pH while it runs and hold it below 3.55 for whites and 3.80 for reds. Secondary fermentation and bulk ageing take three to six months, with the wine under an airlock against oxidation and racked off the lees, which is the same window in which sur lie ageing builds texture. How do professionals record oak in a tasting note?

They score it as a yes or no first, then grade it. The Court of Master Sommeliers Advanced and Master deductive tasting format asks on the nose whether new oak is present, yes or no, then what the intensity is: low, medium or high. Only then does the taster reach for descriptors, from a fixed list running Toast, Smoke, Vanilla, Cinnamon, Clove, Nutmeg, Cardamom, Coffee, Chocolate, Dill, Coconut, Caramel and Cedar. The sheet also asks for a type: French, American or Eastern European. On the palate, oak gets confirmed against the nose and the taster notes whether anything changed.

That discipline matters because oak is a judged attribute, not a decoration. We list quality assessment as taking account of whether a wine "uses certain wine-making techniques, such as barrel fermentation or malolactic fermentation". The OIV's competition standard goes further and lets organisers grant supplementary awards by vinification type or by wine maturing in barrels, "provided that this does not cause confusion" with the main awards. Does oak ageing make a wine last longer?

No. Structure does that, and oak contributes one part of it. We put the range from a few months for Beaujolais nouveau to over twenty years for wine of good structure with high levels of acid, tannin or sugar. Then it adds the line every cellar buyer should keep: "only about 10% of all red and 5% of white wine will taste better after five years than they will after just one year".

Oak adds tannin, so a barrel-aged red starts with more of one ageing component than an unoaked one. It does not supply the acidity that carries a wine through a decade.

Should you trust an oak claim on the label?

Trust the glass instead. We report Frédéric Brochet's experiment in which a mid-range Bordeaux was served in two different bottles, one labelled as a cheap table wine and one carrying a grand cru etiquette. Tasters called the supposed grand cru woody, complex and round, and the supposed cheap wine short, light and faulty. Same wine. In a second test he served a white wine, collected the usual white descriptors, then served the same wine dyed red and collected red ones.

The defence is procedural: taste without the label. That is the whole argument for blind tasting as a buying discipline.
