How to Store Port Wine, Opened and Unopened

How to store port wine comes down to one line: cool, dark, steady, and lying down if the bottle has a driven cork. port "should be stored in a cool but not cold, dark location" at a steady temperature, with the bottle "laid on its side if it has a cork, or standing up if it is stoppered". The Australian Wine Research Institute puts a figure on cool. Citing Amon and Simpson (1986), the AWRI recommends that you keep bottled wine with the cork in contact with the wine, in a dry location at 15 to 20°C. After you pull the cork the clock runs at a speed set by the style, not by the price. Tawny ports "may keep for several months once opened". Old vintage ports "are best consumed within several days of opening". Whether the wine matured in glass or in wood decides which of those two clocks you are on, years before you buy.
Why does the style decide everything?
Because the maturing that happens before bottling settles the wine's exposure to oxygen. We divide port into two broad categories: "wines matured in sealed glass bottles, and wines that have matured in wooden barrels". The first group ages reductively, without exposure to air. The second sits in barrels whose permeability allows a small amount of oxygen through, so the wine oxidises as it matures, loses colour faster and loses volume to evaporation, the angel's share.
Vintage port is the extreme case of the first group. It may be "aged in barrels or stainless steel for a maximum of two and a half years before bottling", then it is "designed to age another 10 to 40+ years in the bottle". Tawny port is the extreme case of the second, "aged in wooden barrels exposing them to gradual oxidation and evaporation" for years before it ever meets a customer. Colheita is a single-vintage tawny aged at least seven years, and it may have spent twenty or more years in wood before bottling. That history, not the label, is what you are storing. What temperature should you store port at?
Fifteen to twenty degrees, held steady. The AWRI is blunt about the cost of getting this wrong: "Excessive storage temperatures will have a marked effect on the shelf life of bottled wine and can see rapid ageing and significant deterioration of the product." Marais (1986) recorded faulty flavours and falling quality after twelve months at 30°C. Ough found that "Temperatures in excess of 40°C will induce visual and sensory changes to a wine in only a matter of days", and that in general "any storage place where the temperature exceeds 25°C for long periods and 40°C for short periods can affect wine quality".
Steadiness matters as much as the number. The AWRI, citing Hirlam and colleagues, says "Thermal cycling where the temperature varies significantly between day and night should be avoided". Heat spikes also do mechanical damage: "Leakage of wine and/or movement of cork stoppers due to thermal expansion of wine" follows exposure to temperatures well above ambient. The wine inside is not always harmed, but the AWRI notes the appearance is, and with it the marketability. For a bottle you intend to resell, that distinction is the whole ballgame. Serving is a separate question with a similar answer. We say "the port should be served at between 15 and 20 °C", that "Tawny port may also be served slightly cooler", and that white port can be served chilled.
Should port bottles lie down or stand up?
Follow the closure, not the style name. A driven cork goes on its side so the cork stays wet; a stopper stands up. Crusted port is "bottled unfiltered and sealed with a driven cork". Unfiltered LBVs "are mostly bottled with conventional driven corks and need to be decanted". Filtered LBV, by contrast, is "usually bottled in a stoppered bottle that can be easily resealed", and a stoppered bottle stands.
The published research on orientation is thinner than the tradition suggests, and it was done on table wine rather than port. Mas et al. (2002) found that after twenty-four months, "wines stored upright had higher yellow/brown colour (measured by OD420nm absorbances) than those stored horizontally; however, the differences were not significant", with more oxidation in upright bottles sealed with agglomerated cork stoppers. Skouroumounis et al. (2005) went further and reported that "the bottle orientation (horizontal or upright) was shown to have little effect on the chemical composition and sensory properties of the two wines across a 60-month period" for a wooded Chardonnay and a Riesling. Does light damage port?
Yes,'s port entry flags it in passing: the location should be dark, as light can damage the port. The AWRI explains the mechanism. "Light exposure can affect the taste of a wine through the production of volatile sulfur compounds", the lightstruck fault. Its Technical Note TN09 traces this to Maujean and Seguin (1983), who showed the fault comes from volatile sulfur compounds believed to derive from the sulfur-containing amino acids methionine and cysteine. Light at wavelengths of 370 nm and 440 nm photo-activates riboflavin, which sits at low levels in wine, those amino acids may then oxidise, and the off aromas follow.
The exposure times are shorter than most people assume. Dozon and Noble (1989) found that still and sparkling white wines in green glass developed a statistically significant lightstruck flavour after 31.1 hours and 18 hours under fluorescent lamps. The same wines in clear glass took 3.3 hours and 3.4 hours. Sunlight is a different order of problem again: TN09 reports that "direct sunlight provides 4286 times the amount of UV-A radiation as fluorescent lamps", making it "more deleterious to wine quality than exposure to electric lighting systems". How long does port last once opened?
Days for the bottle-aged styles, months for the wood-aged ones. We set the frame: "Once opened, a port generally lasts longer than unfortified wine, but it is still best consumed within a short period of time." The list includes port at 19% to 22% alcohol by volume, well clear of an unfortified table wine, but the aging history decides the rest.

Crusted port is the gap in that table: it counts as a ruby port and it needs decanting, but no open-bottle window is published for it, so the ruby rows are your guide. The reason tawny wins is stated outright: "because they are aged longer in barrels, these ports have already been exposed to significant oxidation". Opening the bottle adds a little more air to a wine that has been living with air for years. Open a vintage port and you introduce oxygen to a wine that has sat sealed away from it since bottling. Do madeira and sherry behave the same way?
They confirm the pattern from both ends. Madeira undergoes heating and oxidation on purpose during production. As a result "Madeira is exceptionally durable after opening, with good examples remaining sound for months or longer". Sherry runs the same logic in reverse. We note that "Fino and Manzanilla are the most fragile types of sherry and should usually be drunk soon after opening", while "Amontillados and Olorosos will keep for longer, while sweeter versions such as PX, and blended cream sherries, are able to last several weeks or even months after opening since the sugar content acts as a preservative". Sherry also gets a storage instruction port does not: "Bottles should be stored upright to minimize the wine's exposed surface area." Oxidative handling before the sale buys patience after it. What about humidity and vibration?
Keep humidity constant rather than chasing a number, and treat vibration as unproven housekeeping. The AWRI is direct on the first: "Humidity is important too, as wines under natural closures can dry out and leakage can occur if the air is too dry". It also observes that "in most storage facilities humidity is not adjusted", which tells you how far the industry itself takes this. Vibration is the weaker claim, and it is worth knowing that before you spend money on it. TN09 records the belief that "the vibrations from the refrigerator's compressor are detrimental during wine storage", then adds that "The Institute has been unable to find any literature on this subject". The Comité Champagne is more prescriptive: "The bottle must be protected from light, vibrations and odours", stored at a constant 10 to 15°C in a well ventilated place. How do you open a bottle that has been lying down for decades?
Let it settle, then decant, and think hard before putting a corkscrew into a cork that old. Unfiltered ports throw a deposit: "Port wines that are unfiltered (such as vintage ports, crusted ports, and some LBVs) form a sediment (or crust) in the bottle and require decanting", and that decanting also lets the wine mix with oxygen. Much of the complexity of an aged vintage port comes from the slow decomposition of grape solids in the bottle, solids nobody wants in the glass, which is why "vintage port typically requires a period of settling before decanting and pouring".
The cork is the other hazard, and on a bottle that has been lying down since a 1960s declaration a corkscrew is a risk. The traditional answer is port tongs: "The tongs are heated over a flame and applied to the bottle's neck", the neck is then cooled with cold water to cause a clean break, which avoids using a corkscrew on an old cork "which would otherwise break apart and crumble into the wine".
Storage buys you the option to open the bottle at the right moment.
