How is Sweet Wine Made? Methods for Concentrating Sugar

How is sweet wine made? The answer is residual sugar left in the wine after fermentation. Several distinct methods get it there. Winemakers can increase the initial sugar concentration in the grapes. Alternatively, they arrest the fermentation process before all sugars convert to alcohol. Key techniques for concentrating grape sugars include late harvesting and freezing grapes for ice wine. Other techniques encourage Botrytis cinerea (noble rot) to dehydrate berries, or dry grapes on racks or mats. Fermentation can be stopped by chilling the wine. Adding sulfur dioxide works too. So does sterile filtering to remove yeast. These methods result in a diverse range of sweet wine styles. Each has unique characteristics and aging potential.

How is residual sugar achieved in sweet wines?

Residual sugar in sweet wines comes primarily from stopping the yeast. The yeast must not convert all the grape sugars into ethanol during fermentation. Winemakers can achieve this in a few ways. One method involves chilling the wine. Sulfur and other allowable additives then inhibit yeast activity. Another approach is sterile filtering the wine to remove all yeast and bacteria. That effectively halts fermentation. In high sugar musts, fermentation often stops naturally. The high sugar concentration and rising ethanol levels retard yeast activity. An alternative technique, particularly noted in Germany, is süssreserve. The winemaker holds back some sweet grape juice and adds it to the wine after fermentation is complete. This ensures a precise level of sweetness in the final product.

How are grapes concentrated for sweet wine production?

Concentrating the sugars in grapes is a fundamental step for many sweet wine styles. It leads to a higher sugar content in the must before fermentation. We outline several methods:

  • Late Harvest: Grapes stay on the vine longer than usual. They accumulate more sugar as they continue to ripen and dehydrate. This results in "late harvest wine."
  • Noble Rot (Botrytis cinerea): This method involves allowing or encouraging the Botrytis cinerea fungus to dehydrate the grapes. The fungus punctures the grape skins. Water then evaporates, concentrating the sugars, acids, and flavors within the berry. This process is crucial for wines like Botrytis Sauternes.
  • Ice Wine: Grapes freeze on the vine. Harvest typically happens when temperatures are below freezing. When the frozen grapes are pressed, the water content remains as ice crystals. The concentrated, sugary juice comes out. This method is specifically mentioned: winemaking as "freezing the grapes to concentrate the sugar."
  • Drying Grapes: Grapes can be allowed to raisin. That happens either while they are still on the vine, or after picking and laying them out on racks or straw mats. This dehydration process concentrates the sugars and other compounds. The result is styles like straw wine or passito.

These concentration methods are critical for producing intense sweetness. They also build the complex flavors found in many of the world's most prized dessert wines.

What about fortified sweet wines?

Fortified wines represent a distinct category of sweet wine. A high-proof neutral grape spirit, often brandy, intentionally halts the fermentation process. This addition arrests fermentation and adjusts the alcohol content once the desired sugar level is reached. A well-known example of this technique is port wine. The timing of the spirit addition is crucial. It determines the final balance between sweetness and alcohol.

How do sweet wines age and what are their characteristics?

Sweet wines, particularly those with high sugar and acid levels, often possess excellent aging potential. Only about 5% of white wines will taste better after five years than after just one year. That general observation does not fully capture the longevity of well-structured sweet wines. Their concentrated nature and preservative qualities allow them to evolve over decades.

When evaluating sweet wines, specific sensory characteristics are key. The Court of Master Sommeliers' deductive tasting format includes "Sweetness" as a palate structure descriptor. The scale runs from "Bone Dry" to "Lusciously Sweet." Sweeter wines are denser. They often leave "thick, viscous streaks (called legs or tears" down the inside of the glass when swirled.

Common sensory descriptors for grapes used in sweet wines include:

  • Sémillon: honey, orange, lime.
  • Riesling: citrus fruits, peach, honey, petrol.
  • Muscato: honey, grapes, lime.

The Australian Wine Research Institute (AWRI) notes that sorbic acid is used as an anti-fungal agent in sweet wines at bottling. It is effective against Saccharomyces yeast. However, it has little activity against Dekkera/Brettanomyces and Zygosaccharomyces yeast, or lactic acid bacteria and acetic acid bacteria, according to AWRI: wine faults and taints. The AWRI states that the legal maximum total sulfur dioxide content in Australia is 300 mg/L. That applies to products containing more than 35 g/L sugars, which would include many sweet wines. Potassium sorbate is effective for controlling fungal growth, including yeast, "especially for sweet wines in bottle,".

Serving temperature significantly impacts the perception of sweet wines. We recommend serving "Light-bodied sweet dessert wines" at 6-10 °C (43-50 °F). Those include Trockenbeerenaauslese and Sauternes. The Wine & Spirit Education Trust (WSET) suggests sweet wines be served "well chilled" at 6 °C (43 °F) to 8 °C (46 °F). That covers styles such as Sweet Muscats and late-harvest wines. The OIV: standard for wine competitions specifies that jurors should taste naturally sweet wine, ice wine, liqueur wine, and mistelles at 10-14 °C.

What food does sweet wine belong with?

Serve the wine sweeter than the plate. Sweet wines often need to be sweeter than the dish they are served with, and the failure case is concrete: vintage brut champagne against sweet wedding cake makes the wine taste tart and weak, and the cake can end up with off flavors. Wine expert Mark Oldman calls a dry wine with a sweet food "the equivalent of nails on a chalkboard."

Sugar is not only for pudding. We give sweetness three further jobs at the table. It balances spice and heat, contrasting with the burning sensation caused by peppers and spices in Thai or Sichuan cuisine, the principle we apply dish by dish in choosing wine for Thai food. It contrasts with salt, the standing example being the European custom of pairing salty Stilton cheese with a sweet Port. And it balances tartness in food, especially where the dish carries some sugar of its own, as in sweet and sour sauces.

Sweetness is a scale rather than a switch. We place wines at bone dry, off-dry, semi-dry and dessert level sweetness, with the high sugar content of Sauternes and Tokays at the top of that range. Work out which rung your bottle sits on before you match it to a dessert course.

How are sweet wines categorized in competitions?

International wine competitions, such as those sponsored by the OIV, categorize sweet wines by production method and residual sugar content. That ensures fair evaluation. The OIV: standard for wine competitions defines specific categories for sweet wines:

Group B covers aromatic varieties such as Muscats. Group C covers liqueur wines under a film of yeast, such as Jerez, Fino and Montilla-Morilles.
Category VIII: mistelles A category of its own, with no sub-groups.

Sugar bands run through the still-wine categories as well. The OIV: standard for wine competitions splits still white wines of non-aromatic grape varieties into sub-groups at 4 g/L or less, 4.1 to 12 g/L, 12.1 to 45 g/L and more than 45 g/L of sugar. So a sweet wine is judged against bottles carrying a comparable amount of residual sugar, not against the dry field.
