Tasters described the supposed grand cru as "woody, complex, and round" and the supposed cheap wine as "short, light, and faulty".
Similarly, Brochet served a white wine, receiving descriptions like "fresh, dry, honeyed, lively." When he later served the same wine dyed red, tasters used red wine terms: "intense, spicy, supple, deep". This indicates that visual cues can influence olfactory perception.
In 2011, Richard Wiseman of the University of Hertfordshire ran a double-blind taste test. It involved 400 participants who "just could not tell the difference between cheap and expensive wine". Another study by the University of Bordeaux in 2001 asked 54 undergraduate students to taste two glasses of wine, one red and one white. Participants described the red as "jammy" and noted its crushed red fruit. They failed to recognize that both wines were from the same bottle, with one artificially colored red.

What common faults can impact a wine's quality?

- Volatile Acidity (VA): Often perceived as the odor of vinegar, VA is primarily due to acetic acid (AWRI, 2026). Yeast produces small amounts during fermentation (0.1: 0.4 g/L). - Mousiness: This off-flavor recalls caged mice or cracker biscuit. It is generally perceived late on the palate or after swallowing (AWRI, 2026). It is rarely detected by sniffing. The compounds are not volatile at wine pH (AWRI, 2026). Mousiness is usually of microbial origin, often from lactic acid bacteria. The AWRI states that it is more likely in wines with low SO2 and low acidity (AWRI, 2026).
- Reductive Faults: Volatile sulfur compounds cause these faults. Hydrogen sulfide (H2S) smells like 'rotten egg gas' at concentrations around 1: 2 µg/L (AWRI, 2026). Other sulfhydryls (thiols or mercaptans) can produce 'cabbage', 'garlic', 'onion', or 'rubber' aromas. Ethyl mercaptan has an 'onion-like' aroma at 1.1 µg/L. Methyl mercaptan gives an 'rotten eggs' or 'cabbage' aroma at 0.02: 2.0 µg/L (AWRI, 2026).
- Brettanomyces Faults: These are associated with the growth of Dekkera/Brettanomyces yeast. 4-ethylphenol imparts a 'Band aid®', 'medicinal', or 'pharmaceutical' character. A negative impact is reported at 425 µg/L (Chatonnet et al., 1992, 1993, as cited in AWRI, 2026). 4-ethylguaiacol has 'clove', 'spicy', or 'smoky' aromas. 4-ethylcatechol has a 'horsey' aroma (AWRI, 2026).
- Cork Taint: The main compound responsible is 2,4,6-trichloroanisole (TCA). It has a distinct musty, mouldy aroma (Amon & Simpson, 1989, as cited in AWRI, 2026). Duerr (1985) determined the aroma threshold in Pinot Noir as 1.4 ng/L. It might be lower in dry white wines or higher in full-bodied reds (AWRI, 2026). TCA can also form in oak, tainting wines without cork contact (Coulter, 2023, as cited in AWRI, 2026).
